For One: Breakfast Fruit Salad

Hello critters! Today we're talking healthy(ish) breakfast food.


Here’s what I use

  • 1 apple

  • 1 banana

  • 1 clementine

  • 2 handfuls of blueberries

  • 1 handful of pecan nuts

  • 1 tbsp of chocolate chips

  • Maple syrup

  • Cinnamon


Here’s what I do

  • After a quick wash, I start with the apple which I cut in quarters then again in half, then each piece down to 3 smaller pieces. I toss it all in a bowl and sprinkle some cinnamon on it, then shake it up to make sure every cube of apple gets its share of spice.

  • I peel the clementine and set aside the slices. I cut the banana in medium-sized slices, not too thick but not too thin. Time to add the lot (clementine and banana slices) to the bowl and mix it up.

  • I wash the blueberries and throw them in there too.

  • I crack the pecan nuts in half and again in half, add them to the fruit mix. Then comes the turn of the chocolate chips, yum.

  • Final touch, I drizzle some maple syrup on the whole affair. Mix it all up with a spoon, one last shake shake shake, et voilà.



Now for the backstory.

I spent a month in France on holiday. When I got back to Dublin, I obviously couldn’t get out of the house as per government guidelines. I got my groceries delivered to my house (which is actually super convenient). The next day, as I pondered what I could have for breakfast and looked around the kitchen, I figured the best way to start the day would be with a bunch of fruit. I’ve been making this fruit salad on a regular basis for the past 2 weeks now and I ain’t mad about it. It’s just a simple mish mash of sugars and vitamins but I like it, and maybe you will too :)
