I add the egg and fork it up with the dry mix. There shouldn't be a dry eye in the room, the whole mixture should be wet.

I wash the veggies and cut the courgette and aubergine in cubes (technically it's more of a cylindrical triangle, but you get the idea).

I toss it all in a bowl and sprinkle some cinnamon on it, then shake it up to make sure every cube of apple gets its share of spice.

While the squash is getting roasted, I start cooking the pasta.
